After hulling, the green coffee is graded using hand-held screens. The dried coffee beans are passed through sieves that sort beans by size.

The measured "screen sizes", of the width of the coffee beans, are in sixty-fourths of an inch. Importers are looking for coffee beans of a consistent size as this promotes even roasting.

For the cooperatives known to have ‘gourmet’ or larger sized coffee, such as KAPB, KAPBM, KPKP and KOPVOCH, the beans are graded with a screen size of 17 first, and then a 16. If there is much coffee left, it is graded again with a screen sized 15.

For the other coops, COSAHEC, CAFUMO, KKKLD and CACGAVA, the coffee is graded with a screen sized 16 and then 15.

If there is a significant amount of coffee left, it is graded again with a screen sized 14. RECOCARNO requires that All Bean coffee contain 75% of screen 17 and over and 25% of screen 15-16.

The next stage of processing is hand-picking, or final sorting, of the hulled and graded "green coffee".
